Recipe | Paleo Snickerdoodles (Gluten and Dairy Free)
Oh my goodness, I love these Paleo Snickerdoodle Cookies! Honestly you would never know these cookies are missing dairy and gluten. If you are a fan of the Girl Scout Samoa cookies, you’ll absolutely love these and probably find yourself eating the whole pan. I say that because I almost did, and I am almost certain they would be amazing if you added some chocolate chips!
So it’s time to indulge my friends! Make yourself some yummy Paleo Snickerdoodle Cookies!
1/2 cup Honey
1/2 cup coconut oil, melted
1/2 tsp pure vanilla extract
2.5 cups Almond Meal
1 t Cinnamon
1 t Baking Soda
1/2 t Salt
3 T sugar + 1 tsp cinnamon, mixed together, to roll cookies in.
Preheat oven to 350 degrees. In large bowl mix all dry ingredients and set aside. In a separate bowl, whisk Honey, Eggs, Coconut Oil and Vanilla. Stir into dry ingredients. Let dough refrigerate for about 20 minutes to stiffen. Using a melon baller scoop, roll dough into balls and then roll into cinnamon and sugar mixture. Place on baking sheet and bake for 9-11 minutes. Let cool on a wire rack for a few minutes before eating!
