Well I’ve made the decision that 2012 is my year to get fit – I lost the 20lbs and I am not going to be looking for it any time soon! I have been having some fun in the kitchen lately and creating recipes that fit the Paleo/Advocare life style.
Today I want to show you how to make Low Fat Pizza Stuffed Sweet Potatoes! They’re delicious!
- 1lb Low Fat Ground Turkey
- 1Tbl Poultry Seasoning*
- 1/4 Fennel Seeds
- Salt & Pepper
- 1 tsp Minced Garlic
- 1 Onion, chopped
- Sweet Potatoes
- Black Olives, Sliced
- What ever else you like on your pizza
Make your own Poultry Seasoning:
- 1-1/2 teaspoons dried parsley
- 3/4 teaspoon rubbed sage
- 1/4 teaspoon dried rosemary, crushed
- 1/4 teaspoon dried marjoram
- 1/8 teaspoon salt
- 1/8 teaspoon ground black pepper
- 1/8 teaspoon onion powder
- 1/8 teaspoon ground sage
Add all ingredients, including Fennel Seed to a Mortar and Pestle and crush together .
1 Organic Tomato Basil Marinara Sauce – Trader Joes
Or Pizza Sauce:
6oz Tomato Sauce
1 TBLS Frontier Pizza Seasoning
Putting it all together:
Preheat Oven to 400 degrees
Poke Sweet Potatoes with fork and place on baking sheet. Place in oven and let roast for about 30 min – or until fork tender.
While Potatoes are roasting, crumble and brown your turkey. Use your judgement on if you will need to add a little olive oil to the pan. Add seasonings and onion -cook through.
Once the potatoes are done cut lengthwise and mash up the insides a little – place back on baking sheet. Ladle sauce over the potatoes, then add meat mixture and sliced olives.
Place baking sheet back in the oven and let it all reheat.
*If this sounds like to much work, you can also use the Uncooked Italian Chicken Sausage from Trader Joes and casings removed. FYI- this will add a lot more fat (but goodness) to the recipe. You also have the option to add cheese and dip in Ranch. Thankfully, this did satisfy the craving I had for pizza!
