When I went to Albertsons to scout out some of the deals. I was really hoping for a great deal on Blue Diamond Chili Lime Almonds. When I feel like a salty snack I choose these over a plate of nachos…… They’re yummy! Bad news – no deal this week, Better News – I made my own! Now that I know how simple this is, I don’t think I will have any reason to buy the store bought variety – well unless they are free of course!
3 Cups Raw Almonds
1/4 Cup Fresh Lime Juice
1 T Salt
1/2 tsp Cayenne Pepper
2 T Raw Honey
2 T Olive Oil or Coconut Oil
2 T Chili Powder
In a bowl mix lime juice, salt, pepper, honey, oil and chili powder. Once blended toss in almonds until coated. Spread on a baking sheet and bake at 350 for 15 min. Let cool and serve.
This made a perfect game night snack for me and the hubby – even my kids eat them. While these were not that salty I think I will make them with less salt next just so I stay on track with my healthy meal plan.
