How to make Paleo Fish & Chips (Gluten and Dairy Free)
The other night I made some pretty amazing gluten and dairy free fish and chips. I have used this “breading” for almond crusted orange chicken and it works really well with fish. Eating gluten can get pricey, but it doesn’t have to be. Here is how to make Paleo friendly Fish & Chips
2lbs Fresh Cod Fillets, cut into 1 1/2″ slices – watch for sales. $4.99/lb is a great price
1 Cup Almond Meal
1 tsp Old Bay Seasoning
1 tsp Dried Parsley
2 Eggs, beaten
Salt & Pepper
How it’s done:
Mix all dry ingredient on flat dish (excluding salt & pepper) and beat eggs in separate bowl, set aside. In large Cast Iron Skillet or frying pan, heat coconut oil over medium-high heat. I used about 1 cup to give it about a 1/2″ depth, you may need to add more or less depending on your pan.
While oil is heating up salt & pepper the fish, dip first in egg then breading. You can then fry in coconut oil making sure you give the pieces enough room so you can flip without breaking. About 3-5 minutes for each side depending on the thickness of fish. Breading should be nicely browned in color. Once finished place fish on a plate lined with a paper towel to soak up the additional grease. Serve immediately.
