Day 12 & 13 Advocare 24 Day Challenge – Homemade “Ice-cream”
Today was a tough day – I just got to a point where I was so busy I had a hard time remembering to eat so I was a little off schedule. I will say that the hardest part for me is eating breakfast. I just forget, but it’s SO important! Praise the Lord my husband ending up getting some work – but he’s the one always making sure I am filling my belly. He is a great guy I tell ‘ya! I should probably set an alarm on my phone to remind me. I have never been a breakfast eater and my old routine was drink a cup of coffee, then another cup of coffee until lunch time came around and I was ready to eat my leg off.
For the most part breakfast and lunch have been the same as the previous 11 days – takes away all the guess work and I just switch up dinners.
I do want to share with you what I have been eating the last couple nights because I thought it was delicious! Even if you are not on the challenge, they are great recipes for Gluten Free & Paleo Diets:
Monday: Spagetti with Ground Turkey over spinach & broccoli (I will be honest I prefer Spaghetti Squash, but it’s hard to find right now)
- Used Trader Joes Tomato Basil Marinara Sauce
Curried Chicken with Coconut Rice – This recipe is from Everyday Food – If you follow the paleo plan, I would follow the steps until you get to the part where you add the rice and just add the coconut milk and cook the chicken until it’s done. I also added spinach to mine - I had to use restraint from getting a second dish because it was SOOO good!
*Coconut milk is a little bit of a gray area when you are on the challenge. So you definitely want to use it in moderation – as in all things.
I also had some Roasted Kale Chips that were heavenly – My daughter even liked them!
For dessert I had a small scoop of “Chocolate Ice-Cream!”
In a blender blend one whole banana and a Advocare Meal Replacement Shake, add about 1/4 water until smooth – stick into the freezer until it’s ad your desired consistency. I made mine in the morning and didn’t eat it until the evening. I did need to let it soften a little. The kids enjoyed it too and my daughter said I should tell other parents how to make it too! So there you go!
Exercise – 2 Days of Insanity – It’s tough but I love it!
