Cooking out of my pantry | Orange Balsamic Chicken Legs
Have I mentioned I love to cook? Tonight I made some of the yummiest Balsamic Orange Chicken, inspired by Rachael Ray! What was great is I had pretty much everything the recipe called for, with a few exceptions. I love getting inspired by recipes and making it my own by using what I have on hand.
2 tablespoons extra virgin olive oil
8 Bone-In Chicken Legs (I removed the skin)
Salt and coarse black pepper
1/3 cup orange marmalade
1/4 cup balsamic vinegar
1/2 cup chicken stock
2 t dried Rosemary
3 cups Spinach
Homemade Poultry Seasoning
1 t dried Rubbed Sage
1/2 t dried Onion Flakes
1/4 t dried Marjoram Leaves
Pinch of Salt & Pepper
In a large skillet, heat the Olive Oil over medium-high to high heat.
Season the chicken liberally with salt, pepper and home made poultry seasoning. When the oil starts to ripple, add the chicken and brown on each side. About 3-4 minutes each. Cook until the chicken is tender and cooked through. Sprinkle with Rosemary.
In a small bowl, stir together the marmalade, vinegar and stock and pour over the chicken. To avoid chicken from getting overcooked remove and set on a platter. Cook sauce for 2-3 minutes longer or until it has thickened and becomes a thin glaze. Place spinach on a serving platter and arrange chicken on top. Pour glaze over chicken and spinach and serve.

Well my daughter said it tasted like Costco Chicken and that is one of the biggest compliments this mom can get because they LOVE the Costco Rotisserie chicken!
