• Recipe: Almond Roca

    I usually make people beg me for this recipe, but I have changed my mind and thought some things the world just needs to know, and making Almond Roca is one of them.  I also probably won’t have to worry about showing up to the same Christmas party as you :)

    You will want to make sure that you have a Candy Thermometer that has an accurate reading.  Other than that this is simple and worthy to give as Christmas Gifts to your neighbors and family.

    Homemade-Almond-Roca-Recipe

    How to make Homemade Almond Roca

    1 1/2 Cups Sugar
    1 Cup Butter
    3 T Water
    1 T Light Corn Syrup
    1 t Vanilla
    12 oz Chocolate Chips
    1 cup Toasted almonds

    Pre-Heat oven to 325 degrees. While oven is pre-heating, chop your almonds with a sharp knife or pulse in your food processor. Lay out in a cookie sheet and toast for about 5 min, and set aside.

    Prepare 9×13 pan by spraying it with non-stick spray.

    In Medium Pan over medium heat, boil first four ingredients. Stir until butter is melted.  Place candy thermometer in pan and leave until 310 degrees stirring a few times, but watch closely once it reaches 290 degrees. Once the temp is at 310, turn off heat and add vanilla, stir quickly.  Pour over prepared pan and sprinkle chocolate chips, cover for two minutes.  Take a rubber spatula and smooth all the chocolate.  Sprinkle the top with Almonds.

    Variation:  You could place the almonds on the bottom of the 9×13 pan and sprinkle the top with almond dust and what I do.

      Hey Amber I thought I'd share a couponing experience I'm really proud of. My first Safeway couponing trip. They had a buy three get $3 back instantly deal as sell as the items were 1.49 each. I printed 2 maries dressing coupons from manufacturer $1 each. So I bought 2 Marie dressings which would be .49 cents each if you don't count the $3 back at the end. I also bought craisins 1.49. In the end with this deal I made .54 cents. Then I bought fresh dry powerball tablets 32 pack. They had 2/$10. I bought one for $5 and had 1.50 off manufacture coupon. Then I bought frosted minis. Store coupon was 1.99 each. I had 2/$1 off coupon so paid 2.98 for cereal. In the end I paid total $5.42. They messed up the order so I had to fix it but it was so worth the trip! If I paid full price I would of spent $26.00! Thank you Amber for all your help in getting me to the road to savings. Shellie

      Do you know about the Almond Roca factory outlet in Fife?

      It's right by Sportco, and you can find some great deals! They sell funny things, too, like extra wrap and ribbon, and they also have free samples of broken roca (yum-0)!!

      Yum! Making almond roca is a tradition for us every Christmas. Over the years I got tired of chopping the almonds though so now I just get Hershey's bars with almonds and grate them. Not quite as many almonds, but works great for us.

      I feel deprived since I’ve never heard of this before! Just so I know how its supposed to turn out, is is supposed to be crunchy or chewy? Can you just used those blue diamond salted almonds that are always on sale at Walgreens?

        I don’t know if crunchy is the right word. It cracks, but not to hard on your teeth or anything. And I wouldn’t use the blue diamond unless they are unsalted :)

      After receiving a (long gone) can of the “famous” almond rocha for Christmas, I am craving it now. I am going to try making this tonight…I’ll definitely post back to let you know how it turned out!
